Chapman Hill is a Victorian family-run olive grove just outside of Melbourne and I first tasted their olive oils at my local providores, Key Ingredients in Clifton Hill. Then I started seeing them pop up in other places I visited – such as Coin Laundry and Philippa’s Breads.
Chapman Hill produce extra virgin olive oil from three different olive tree varieties – Tuscan Frantoio and Lecciono and a West Australian evolved variety called New Norcia. Each of the varietals has different qualities, from grassy to peppery to nutty (my favourite is the nutty New Norcia).
